5 Cheese - Mac and Cheese

  1. Preheat oven to 450 degrees and butter a 13x9 baking dish.
  2. In a large pot of boiling water add salt and macaroni.
  3. Cook according to packaged directions.
  4. In a large cast iron frying pan, saute the bacon.
  5. Remove bacon when crispy.
  6. Without draining the grease, add the onions to the pan.
  7. Cook until tender. Add the butter.
  8. When the butter is melted, mix in flour with whisk until smooth.
  9. Whisk in the mustard.
  10. Slowly add milk and cream while continuing to stir.
  11. Add the thyme, bay leaf, and salt. Let come to a simmer and stir frequently for 15 minutes.
  12. Strain the hot milk mixture into a bowl and discard the solids.
  13. Working quickly, mix in 1 cup fontina, blue cheese, 12 cup Gruyere, 12 cup white Cheddar, 12 cup Parmesan, the reserved bacon and parsley.
  14. Stir until the cheese is melted.
  15. Add the macaroni to the cheese mixture to coat.
  16. Add the noodle mixture to a 13x9 baking dish.
  17. Mix the remaining cheese and bread crumbs together and sprinkle on top of the noodles.
  18. Back for about 20 minutes
