Beef Roll UPs




  1. On piece of waxed paper combine salt, pepper and flour
  2. Dredge beef in flour pound in flour
  3. Reserve remaining flour
  4. Arrange 12-slice bacon in center of each slice of beef top with 12 pickle
  5. Roll up like a jellyroll, secure with wooden picks.
  6. Melt shortening in medium skillet, brown the beef rolls well on all sides
  7. Add onions and celery sauté for 5 minutes
  8. Add water and pickle liquid
  9. Bring to a boil cover simmer for 112 hours or until tender
  10. Arrange beef rolls on serving dish, keep in warm place
  11. Blend reserve four and cream gradually stir into pan juices
  12. Cook over low heat stirring constantly, until thickened
  13. Pour over beef rolls
