English's Sweet Potato Biscuits

Prepare the Sweet Potatoes

  1. Cook sweet potatoes in water.
  2. Once sweet potatoes are easy to poke with fork, drain.
  3. Chill sweet potatoes by placing in refrigerator or sit in cold water for about 3 minutes.
  4. Mash sweet potatoes with fork and remove any fibers


  1. Combine first 3 ingredients in mixer at lower speed
  2. Add remaining 4 ingredeints and mix well to incorporate
  3. Knead by hand in large bowl until thoroughly mixed
  4. Refrigerate mixture until dough is cold and stiff

Time to bake

  1. Preheat oven to 350 degrees.
  2. Roll out on floured surface to 14 inch thick and cut with biscuit cutter
  3. Place biscuits on cookie sheet sprayed with cooking spray
  4. Bake 15-18 minutes
