Hollandaise Sauce

Ingredients

  1. In small saucepan beat together and cook over very low heat, stirring constantly until yolk mixture bubbles at edges

    • 3 egg yolks
    • 12 cup water
    • 2 tablespoons lemon juice
  2. Stir in butter 1 piece at a time until melted and sauce is thickened.

    • 12 cup firm cold butter cut into¬†eighths
  3. Stir in seasonings.

    • 14 teaspoon salt
    • 18 teaspoon paprika
    • dash ground red pepper
  4. Remove from heat.

  5. If not using immediately cover and chill.
