Honey Mustard Coleslaw

  1. Reduce vinegar by half in a small saucepan over medium-high heat, about 10 minutes.
  2. Stir in honey, and let cool.
  3. Combine cabbage, carrots, and onions in a large bowl
  4. Toss with vinegar mixture.
  5. Add salt and black pepper and toss again.
  6. Chill for 20 minutes.
  7. Stir together mayonnaise, mustard, red pepper and parsley in a small bowl.
  8. Add mayonnaise mixture to cabbage.
  9. Chill 2 hours in an airtight container until ready to server.
