Jalapeno Poppers


Makes 30 jalapeno peppers



  1. Preheat on oven to 425.
  2. Remove hot sausage from link and place in skillet over medium heat.  Cook sausage until brown.  Drain grease.  Set aside to cool.
  3. Using latex gloves, cut jalapeno peppers in half lengthwise and remove seeds.  I keep the ends on the jalapeno for easy pickup.  Wash and discard seeds.
  4. In a large bowl, mix cream cheese, sausage and cheese together.  Fill each jalapeno with a heaping spoonful of the sausage mixture.  Arrange stuffed halves in a Pam sprayed baking dish.
  5. Bake in the oven for 20 minutes.  The poppers should be bubbly and browned.

Serve with Ranch dressing or your favorite sause.
