Oatmeal Pancakes

1 cup quick cooking oats 1 tablespoon white sugar 1 teaspoon baking powder 12 teaspoon baking soda 12 teaspoon salt 34 cup buttermilk 1 teaspoon vanilla extract 2 tablespoons vegetable oil 1 egg


  1. Place flour, oats, sugar, baking powder, baking soda, salt, buttermilk, vanilla, oil and egg in a food processor and puree until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat.
  3. Pour or scoop the batter onto the griddle, using approximately 14 cup for each pancake.
  4. Brown on both sides and serve hot.
