Quinoa Crusted Chicken Fingers




  1. Spread out the cooled quinoa on a piece of wax paper or aluminum foil.
  2. Sprinkle on the breadcrumbs over the quinoa.
  3. With your fingertips, squeeze the quinoa and breadcrumbs together until the moisture of the quinoa is absorbed.
  4. Place the egg whites in a shallow bowl.
  5. Sprinkle the chicken with salt, garlic powder, pepper and paprika.
  6. Dip the chicken in the egg and then into the quinoa mixture.
  7. Place onto a plate.
  8. Warm the oil in a large cast iron skillet over high heat.
  9. When the oil is hot, add the chicken and reduce the heat to medium.
  10. Cook each side 4 minutes, turning once, until the crust begins to brown.
  11. Transfer the cooked chicken to a plate and serve immediately.
