Sole Piccatta




  1. Begin steaming small potatoes on stove.
  2. While potatoes are cooking, combine flour, salt and pepper in a low bowl.
  3. Heat the olive oil in large cast iron skillet.
  4. Dry fish and place in flour.  
  5. Coat fish in flour mixture and place in pan.  
  6. When the filets have been browned on both sides.  
  7. Place in warming drawer.
  8. When all fish is done lower the heat to simmer.  
  9. Add the wine.  Mix.  
  10. Then add the mushrooms, garlic, and onion.  
  11. Cook until mushrooms are tender.  
  12. Add salt and pepper, lemon juice, butter, capers and parsley.  
  13. Once butter is melted add cream.

Serve sauce over fish and potatoes.
