Black Joe Cake

Ingredients

The cake batter (can be found on the back of Hershey Cocoa’s box): * 2 cups sugar * 1 34 cup all-purpose flour * 34 cup Hershey’s Cocoa * 1 12 tsp baking powder * 1 12 tsp baking soda * 1 tsp salt * 2 eggs * 1 cup milk * 12 cup vegetable oil * 2 tsp vanilla extract * 1 cup hot coffee (only substitution of the Hershey recipe)

The icing:

Directions

  1. Heat oven to 350.
  2. Grease and flour 2 nine-inch baking pans.
  3. Combine dry ingredients in large bowl.
  4. Add eggs, milk, oil and vanilla.
  5. Beat on medium speed for 2 minutes.
  6. Stir in hot coffee.
  7. Batter will be thin.
  8. Pour in pans.
  9. Bake 30 to 35 minutes until toothpick check is clean.
  10. Cool 10 minutes and remove cakes from pan.

*This recipe makes more then the 2 nine-inch, so I use 3 eight-inch pans. If you don’t have 3 eight-inch pans, use the 2 nine-inch pans and make a few cupcakes with the remaining batter.

Icing

  1. Just mix these ingredients together slowly in order they are listed, spread on cakes when cool.
