Tom's Tempura Batter



1 egg 1 c ice cold water 13 tsp baking soda 34 c flour


  1. Break the egg into a bowl containing the iced water and whisk until frothy.
  2. Add baking soda and flour.
  3. Mix until the flour is just mixed in. (Do not over beat).
  4. Batter should be very thin. If too thick, add a little more iced water.
  5. Place the bowl in a larger bowl full of ice to help keep the batter chilled when frying tempura items.
